Recipe Details
Add white vinegar while cooking eggplants to keep the purple colour of the eggplants. This is a very simple and healthy appetizer.

Step 1
Rinse and cut the eggplants into pieces. Marinate with some salt for 5 minutes.

Step 2
Bring a pot of water to boil. Add white vinegar and eggplants. Cook the eggplants for 5 minutes.

Step 3
Transfer to ice water and let cool. Drain and transfer to a plate.

Step 4
Mix together mirin, bonito soy sauce, water and sugar.

Step 5
Pour the sauce over the eggplants. Sprinkle with bonito flakes and ready to serve.
