Lotus Wrapped Chicken Rice with Chestnut and Red Dates

Step 1
Soak the glutinous rice for at least 5 hours or overnight, drain and combine with the long grain rice

Step 2
Soak the lotus leaf in warm water until soft

Step 3
In the bamboo steamer, layer the lotus leaf on the bottom then place the rice inside

Soak the red dates until soft and remove the seeds

Step 5
Rough chopped the chestnut, then sprinkle the red dates and chestnut over the rice

Cover and steam it for 20 minutes

Soak the mushroom until soft and cut into dice

Finely chopped the onion

Cut the chicken into small pieces and marinate for 20 minutes

In a pan, add oil on a medium high heat. Sauté the garlic and ginger until fragrant

Add the mushrooms and chicken to cook for 3-5 minutes

Step 12
Transfer the chicken and mushrooms over rice

Steam it for another 15 minutes until the chicken is fully cooked

Sprinkle with green onions to garnish and serve hot
