Ingredients

Step 1
Clean the pork belly and drain dry. Blanch the pork belly for 5 minutes in boiling water on high heat. Remove and drain dry

Step 2
With a brush or a spoon, spread a layer of dark soy sauce [use about 1 tablespoon] on the skin of the pork belly

Step 3
Heat up 250mL oil in a wok on medium high heat. Add the pork belly to fry for 3-4 minutes until golden in color. Remove from heat and drain dry

Step 4
Next, in a wok, heat up some oil on high heat. Add the garlic, green onions, and ginger to saute until aromatic, about 30 seconds

Step 5
Add the pork belly, picked green chillies, fermented black beans, and star anise. Next, add all of the sauce ingredients, make sure that the amount of liquid is enough to cover the pork

Step 6
Reduce to medium heat, cover the lid and simmer for 30 minutes

Step 7
After 30 minutes, the sauce would have reduced by half. Now take out the pork belly and slice them into 1-cm thick pieces

Step 8
Trim the edges if you like. Return these pork belly slices to the wok and simmer for 20 more minutes

Step 9
Add some sauce into pan, then add 1 tablespoon thicken sauce and some oil mix well

Pour sauce onto the pork. Ready to serve
