Traditional tea Smoked Chicken

Step by Step Instructions

Step 1
Finely chop 5g green onions and pepper corn, mix with salt

Step 2
Sprinkle the seasoning (from step 1) on top of chicken, marinate for 20 minutes

Step 3
Place the marinated chicken in a bowl, then inside a bamboo basket to steam until 80% cooked, remove from heat

Step 4
Add brown sugar to melt, add tea leaves

Step 5
Set up a rack to smoke the chicken. Placing the chicken skin-side down, cover the wok and smoke the tea leaves on medium heat

Step 6
Once the smoke begins to seep from the side of the lid, remove from heat. Allow the chicken to rest inside the wok for 5 more minutes
