Step 1
Soak the gelatin sheet in cold water until soften.

Step 2
Bring half of the whipping cream to simmer, add the gelatin sheet and mix together.

Step 3
Add the cream mixture into the chocolate pieces and mix well.

Whip the remaining whipping cream until soft peak and fold it into the chocolate mixture.

Step 5
Place the mousse ring on the chocolate cake and set still. Fill the chocolate mousse about half of the ring.

Step 6
Place another slice of the chocolate cake about one size down and refrigerated for 20 minutes.

Step 7
Remove from the fridge and fill the chocolate mousse until the height of the ring and refrigerated again for an hour.

Step 8
Heat up the whipping cream and the glucose syrup. Add the cream mixture into the chocolate pieces and stir until the chocolate is melted. Let cool and set aside.

Step 9
Remove the mold from the chocolate mousse and refrigerate for 10 minutes.

Step 10
Pour the chocolate glaze over the chocolate mousse until the glaze is set. Garnish and ready to serve.
