Step by Step Instructions

Step 1
Remove the winter melon skin, seeds and thin slice

Step 2
Soak the mushroom until soft and cut it into strip

Step 3
Cut the carrot and celery into strip

Step 4
Smash the shrimp and chop it into paste

Step 5
Marinate the shrimp paste with Chinese cooking wine, salt, white pepper, sesame oil and corn starch for 10 minutes

Step 6
Spread the shrimp paste over the winter melon paper

Step 7
Place the mushroom, carrot, celery and roll it up

Step 8
Transfer the roll on the plate and steam it for 10 minutes

Step 9
In a pot, bring the water to boil and blanch the choi sum until tender and place it around the plate

Step 10
In a pan, bring the chicken broth into simmer and add the corn starch water to thicken the sauce

Step 11
Pour the sauce over the roll, sprinkle with some green onion and ready to serve
