Step 1
Preheat the oven to 200°C.

Step 2
Soak the skewer in water to prevent burning when roasting.

Step 3
Slice the zucchini and red onion. Peel, seed and slice the pumpkin. Remove the seed and slice the red bell pepper.

Step 4
Mince the garlic and basil. Add ground cumin, cayenne pepper, olive oil, salt, black pepper and mix well.Toss the vegetables with the seasoning.

Step 5
Skewer the vegetables.

Step 6
Wrap the skewer with foil, transfer to the baking tray and bake it for 10 minutes.

Step 7
Remove the foil and bake it for another 10 minutes or until golden brown. Ready to serve.
