Step 1
Soak the dried mushroom and set aside. Slice the garlic. Clean and drain the chicken. Set aside.

Step 2
In a pan, add some oil and sauté the ginger, garlic and green onion. Add the chicken and cook until golden brown.

Step 3
Add the Chinese cooking wine, oyster sauce, light soy sauce and salt. Mix well.

Step 4
Add the mushrooms, chestnuts and enough water to cover the ingredients.

Step 5
Bring it to boil then turn the heat to low, cover the lid and cook for 20 minutes.

Step 6
Add the rock sugar and turn to high heat. Cook until the chestnuts are done. Remove and garnish with shredded green onion. Ready to serve.
