Deep-fried Spicy Shrimp Spring Roll

Step by Step Instructions

Step 1
Mix together light soy sauce, Sriracha, lime juice, rice vinegar, sesame oil, sugar, minced garlic, salt and ground white pepper as shrimp marinade.

Step 2
Peel, remove the headand devein the shrimps.Leave the tails on. Clean and pat dry with kitchen towel.

Step 3
Slightly score the shrimp back. Coat with the shrimp marinade, transfer to a plate and marinate for 15 minutes. Avoid coating the shrimp tails with sauce.

Step 4
Mix together shrimp paste, ground white pepper, salt and egg white. Wrap the shrimps with shrimp paste.

Step 5
Halve the spring roll wrappers diagonally. Place the half wrappers with the apex on top. Add the shrimps in the middle. Roll and form into spring rolls. Seal the edges with egg wash.

Step 6
In a pan, add enough oil for frying on a medium high heat. Add spring rolls when simmering. Reduce to low heat and deep fry until 80% cooked.

Step 7
Transfer to a plate. Increase to medium high heat. Add the spring rolls again and deep fry until golden brown. Soak up the excess grease with kitchen paper. Ready to serve.
