Sichuan Spicy Pork Knuckle

Cut onion, carrot and celery into medium size

Remove the skin of the garlic

Blanch the pork knuckle with white vinegar, bay leaves, garlic and white peppercorn for 15 minutes

In a shallow pan, add some oil on a high heat. Sauté the onion and garlic until fragrant, then add carrot, celery, rice wine and soda water

Add chicken broth, soy sauce, dark soy sauce, Sichuan pepper. Place the pork knuckle to the sauce, reduce the heat to medium

Cover the lid and let it braised for 1 hour to 1½ hours

Transfer the pork knuckle to the clay pot and let cool

In a pan, add some oil and sauté the peanut, Sichuan pepper and dried chili pepper
