Blueberry Pancake

Step by Step Instructions

Step 1
Chop the mint leaves. Cut the vanilla bean and scrap out the seeds. Mix well the cream cheese, vanilla seeds and powdered sugar. Add the chopped mint leaves. Refrigerate and set aside.

Step 2
Mix well the all purpose flour, caster sugar, baking powder and salt. In a bowl, add the yogurt, milk, butter, eggs, oil and whisk together. Set aside.

Step 3
Beat the egg white until stiff peak and set aside.

Step 4
Whisk together the powders and milk mixture. Add the egg white and mix well.

Step 5
In a pan, add some oil. Ladle the batter, and place the blueberries over and cook until golden brown on both sides. Ready to serve.

Step 6
You can also enjoy the pancake with raspberries and cereals.
