Step 1
Combine together the glutinous rice flour, sugar and water.

Step 2
Steam under high heat for 20 minutes. Stir every 5 minutes to ensure it is steamed thoroughly. Let cool and set aside.

Step 3
Place the dough on a sheet of parchment paper. Sprinkle the rice flour over (to prevent from sticking hands).

Step 4
Use a rolling pin to flatten the dough, and use a round mold to cut out mocha skin. Refrigerate for 10 minutes.

Step 5
Wrap the ice cream.
